Basic Properties

I. Physicochemical Properties:

 Sodium diacetate (SDA), anhydrous form, has a molecular weight of 142.9. It is a white crystalline powder with an acetic acid odor, is hygroscopic, readily soluble in water and alcohol, and has a hexahedral crystal structure. Its melting point is 96-97℃, and it decomposes above 150℃. It is stable under cool, dry conditions. Sodium diacetate primarily exerts its antibacterial effect through the decomposition of molecular acetic acid, exhibiting good inhibitory ability against bacteria and molds. Sodium diacetate is an unspecified additive (ADI) substance but is classified as a GRAS (Generally Recognized As Safe) substance by the US FDA.

II. Mechanism and Effects of Sodium Diacetate's Antibacterial Action: 

Studies have shown that sodium diacetate primarily inhibits mold growth by effectively penetrating the cell walls of molds and interfering with enzyme interactions. This results in highly effective mold and decay prevention. Sodium diacetate shows superior inhibitory effects against Aspergillus niger, Rhizopus nigricans, Aspergillus flavus, and Trichoderma viride compared to potassium sorbate.

1. Food Industry – High-Efficiency Preservative & Flavor Enhancer

As a food-grade additive, it integrates preservation, flavor enhancement and pH regulation. It inhibits mold, bacteria and yeast, extends shelf life, improves umami and sour taste.

2. Feed Industry – Green Feed Additive

A safe, efficient feed preservative and growth promoter, it inhibits harmful microorganisms, prevents mold, improves palatability. It promotes animal appetite, nutrient absorption and immunity, widely used in poultry, livestock and aquatic feed, reducing waste and improving breeding efficiency.

3. Chemical Industry & Intermediates

As a key chemical intermediate, it is used in organic synthesis (acetate salts, dyes, resins). It also acts as a buffer, corrosion inhibitor and plasticizer, with good water solubility and stability, supporting large-scale industrial production.

4. Food Processing Auxiliary

As a pH adjuster and buffer in food processing, it stabilizes quality and texture. Especially suitable for meat curing, bread leavening and beverage blending, optimizing processes and ensuring consistent taste.

5. Other Industrial Applications

Used as an environmentally friendly, low-corrosion deicing agent and metal anti-corrosion treatment agent. It also serves as an auxiliary in textile dyeing and water treatment, with excellent performance and wide applicability.

  • Use inwell-ventilated areas to avoid dust and vapor buildup (sodium diacetate is a crystalline powder, prone to dust dispersion).

  • Avoid eye, skin, and respiratory contact; do not ingest or breathe dust (may cause mild to moderate irritation).

  • Wash hands thoroughly after handling; prohibit eating, drinking, or smoking in work zones to prevent accidental ingestion.

  • Handle containers gently to prevent spillage; minimize dust creation and store away from moisture to avoid clumping.

2. Personal Protective Equipment (PPE)

  • Eye/Face: Chemical safety goggles or face shield (prevents eye irritation from dust or aqueous solutions).

  • Hands: Chemical-resistant gloves (nitrile or vinyl) to avoid skin contact and minor irritation.

  • Body: Impervious lab coat or protective clothing to prevent fabric contamination and clumping from moisture.

  • Respiratory: NIOSH-approved dust mask (required when handling large quantities, during spill cleanup, or in poor ventilation).

3. Storage Conditions

  • Store in cool, dry, well-ventilated space; keep containers tightly sealed to prevent moisture absorption (reduces clumping and degradation).

  • Keep away from excess moisture, heat, and incompatible substances (avoids reactivity and clumping).

  • Store separately from strong bases, oxidizing agents, food materials, and aquatic-sensitive areas (prevents reactions and environmental harm).
