Gluconic Acid is a mild organic acid. It is commonly found as a colorless to faint yellow syrupy liquid or a white crystalline powder. It is highly soluble in water and, due to its polyhydroxy structure, has excellent chelating properties, forming stable complexes with metal ions like calcium, iron, and aluminum. This makes it widely used in the food industry as an acidulant and sequestrant, in the construction industry as a cement additive to retard setting, and in detergents and pharmaceuticals.
