Basic Properties
1. Physical Properties
Appearance: White crystalline powder or granules at room temperature, odorless, slightly acidic taste, readily soluble in water, insoluble in organic solvents such as ethanol and ether.
Solubility and Aqueous Solution Characteristics: Solubility increases with increasing temperature. At 20℃, the solubility in water is approximately 15g/100mL. The aqueous solution is acidic, with a pH value of approximately 4.0~4.5 (1% aqueous solution).
Hygroscopicity and Stability: Slightly hygroscopic. Stable when stored in a dry, well-ventilated environment. Prolonged exposure to humid air may cause it to absorb moisture and clump, but this does not affect its chemical properties. Heating above 220℃ will decompose it to produce sodium pyrophosphate, sodium phosphate, and other products.
Density and Melting Point: Relative density is approximately 1.86. No definite melting point; no melting occurs before thermal decomposition.
2. Chemical Properties
Hydrolysis Characteristics: It undergoes stepwise hydrolysis in aqueous solution, ultimately producing sodium dihydrogen phosphate and phosphoric acid. The hydrolysis rate is significantly affected by temperature and pH; increasing temperature accelerates the hydrolysis reaction.
Chlorination Properties: It can form stable chelates with metal ions such as calcium, magnesium, and iron, effectively complexing metal ions in water, reducing water hardness, and can also be used to prevent oxidative spoilage caused by metal ions in food.
Buffering Properties: Because its aqueous solution is weakly acidic and the hydrolysis products are phosphates in different forms, it has a certain buffering capacity, maintaining a stable pH value in the system.
Reaction with Alkalises: It reacts with strong alkalis such as sodium hydroxide to produce sodium pyrophosphate; when mixed with carbonates and heated, it releases carbon dioxide gas. This property makes it widely used in food leavening agents.

1. Food Industry (Core Application Areas)
Main Components of Leavening Agents:This is the primary use of sodium pyrophosphate. When combined with alkaline substances such as sodium bicarbonate, it can be used as a leavening agent in baked goods such as bread, cakes, biscuits, and steamed buns. During baking, sodium pyrophosphate reacts with the alkaline components, slowly releasing carbon dioxide gas, causing the dough or batter to expand and ultimately creating a loose, porous texture. Compared to other acidic leavening agents, sodium pyrophosphate produces gas at a gentler rate, preventing baked goods from collapsing.
Meat Product Improver:Sodium pyrophosphate can be used as a water-retaining and tenderizing agent in meat products such as ham, sausages, meatballs, and luncheon meat. It chelates calcium and magnesium ions in meat, improving its water-holding capacity, reducing moisture loss during processing, and keeping meat products tender and juicy. It also improves the elasticity and slicing properties of meat products, preventing them from hardening during storage.
Seafood Preservation and Color Protection: Used in the processing of seafood such as shrimp and crab, sodium pyrophosphate inhibits enzymatic browning in crustaceans, preventing discoloration during storage and processing; it also maintains the elasticity of seafood, extending shelf life.
Dairy and Beverage Stabilizer: In formulated milk, non-dairy creamer, and carbonated beverages, sodium pyrophosphate acts as an emulsifying stabilizer, preventing ingredient separation and sedimentation, and improving product uniformity and stability.

Water Treatment Chelating Agent: Sodium pyrophosphate forms stable chelates with metal ions such as calcium, magnesium, and iron in water, which can be used in industrial circulating water treatment to prevent scale buildup; it can also be used as a boiler water softener, reducing the concentration of hardness ions in the water and decreasing the risk of scale buildup in boiler pipes.
Detergent Additive: As an additive in detergents such as laundry powder and dishwashing liquid, sodium pyrophosphate has washing aid and anti-redeposition effects. Skin Contact Protection:Sodium pyrophosphate powder or aqueous solution is slightly irritating. Prolonged or repeated contact can cause dry skin and peeling. Wear **nitrile rubber gloves** and long-sleeved work clothes during handling to avoid direct skin contact. If accidental contact occurs, immediately flush the affected area with plenty of running water for 10-15 minutes. If itching, redness, or other allergic reactions occur, seek medical attention immediately.
Eye Protection:Splashes of sodium pyrophosphate powder or solution into the eyes can irritate the conjunctiva and cornea, causing pain, tearing, and conjunctival congestion. Wear **impact-resistant goggles** during operation. When performing dusty operations such as feeding or grinding, a face shield can be used in conjunction. If eye contact occurs, immediately lift the eyelids and flush continuously with plenty of water or saline solution for 15-20 minutes, avoiding rubbing the eyes. Then seek medical attention as soon as possible.
Respiratory Protection:Sodium acid pyrophosphate powder is prone to dust generation. Inhalation can irritate the nasal, pharyngeal, and respiratory mucosa, causing discomfort such as coughing, dry throat, and chest tightness. When working in poorly ventilated environments, the exhaust system must be turned on, and a **KN95 or higher level dust mask** must be worn. Avoid prolonged grinding or mixing operations without protection.
Ingestion and Oral Protection:Industrial-grade sodium acid pyrophosphate is strictly prohibited from consumption. Food-grade products must be used strictly according to national standards. Ingestion of industrial-grade products can irritate the digestive tract, causing symptoms such as nausea, vomiting, and abdominal pain. Thoroughly wash hands after handling. Eating, drinking, and smoking are strictly prohibited in the work area. Products must be stored separately, and industrial-grade and food-grade packaging must be clearly labeled to avoid confusion. If ingestion occurs, do not induce vomiting. Immediately drink plenty of warm water to dilute the product and seek medical attention with the product label in hand.
2. Storage and Transportation Safety Precautions
Storage Requirements
- Store in a cool, dry, and well-ventilated warehouse, away from fire and heat sources. The warehouse temperature should be controlled below 35℃, and the relative humidity should not exceed 80% to prevent the product from absorbing moisture and clumping.
- Use **sealed, moisture-proof packaging** (such as woven bags or cardboard drums lined with polyethylene film). When stacking, elevate the bottom of the product by at least 10cm and maintain a 30cm distance from the wall to avoid moisture and direct sunlight.
- Strictly prohibit storage with **strong acids, strong alkalis, and strong oxidizers** (such as hydrochloric acid, sodium hydroxide, potassium permanganate, etc.) to prevent chemical reactions that generate toxic or harmful gases or impurities. Food-grade products must be stored separately, away from industrial chemicals.
- The storage area should be equipped with spill response equipment (such as brooms, dustpans, and leak-proof mats) and appropriate fire extinguishers.
Transportation Requirements
- Transport vehicles must be kept dry and clean. The cargo compartment should be lined with rainproof tarpaulins or plastic film to prevent product moisture damage. During transport, the product should be covered with a tarpaulin to prevent damage from rain, sun exposure, and bumps.
- Handle with care during loading and unloading; throwing or dragging packaging is strictly prohibited. Industrial-grade and food-grade products must be transported separately. Mixing with strong acids, strong alkalis, or other hazardous chemicals is strictly prohibited.
- Comply with local transportation regulations. Food-grade products must meet the hygiene standards for food additive transportation. Transportation routes should avoid densely populated areas such as residential areas and schools.
3. Leakage Emergency Handling
In case of a small leak, immediately collect the leaked material into a **sealed container** using a dry broom or shovel, label it "Waste Sodium Pyrophosphate," and store it properly. Entrust the subsequent disposal to a qualified company. Do not discard it indiscriminately or flush it down the drain.
In the event of a large-scale leak, first establish a warning zone and prohibit unauthorized personnel from entering; use impermeable mats to contain the leak area to prevent powder from spreading or being washed away by rainwater and contaminating the water; handling personnel must wear full protective equipment (protective clothing, gloves, goggles, dust masks), and collect the spilled material into a dedicated container.
4. Environmental Safety Precautions
Sodium pyrophosphate will increase the phosphorus content of water bodies after entering them. Long-term, large-scale discharge can easily lead to eutrophication and damage aquatic ecosystems. Production wastewater must be treated to remove phosphorus and meet standards before discharge; direct discharge into rivers, lakes, or other natural water bodies is strictly prohibited.
Discarded product packaging must be recycled separately. Food-grade packaging must be cleaned and treated as recyclable material; industrial-grade packaging must be handed over to a professional hazardous waste treatment unit for disposal. Expired or scrapped industrial-grade products must be handled in accordance with hazardous waste management regulations; unauthorized burial or incineration is prohibited.
